Khurmani (also known as Khubani or Khumani) is the Hindi/Urdu name for dried apricots. Sourced primarily from Turkey, Afghanistan, and the Ladakh/Kashmir regions of India, they are small, orange-golden dried fruits with a chewy, slightly leathery texture and a concentrated sweet-tart flavor.
